The Texas BBQ Trail


It’s official: we ate all of the BBQ in Texas! For seven days, we tried every pulled, rubbed, dried and smothered meat we got our hands on.

It’s official: we ate all of the BBQ in Texas! For seven days, we tried every pulled, rubbed, dried and smothered meat we got our hands on.

We started our trip in Austin with wild boar ribs, brisket, spicy sausage and pulled pork at a cozy spot called Lambert’s Downtown Barbecue. This was the first of many amazing spreads we encountered on our trip. In Austin we also visited Stubb’s, which provides a side of entertainment with their BBQ. Our server even showed us how the smoking process works.

We took a BBQ break and strolled through Austin’s South Congress Strip. Tons of fun shops, bars and venues line the street. Highlights included a taxidermy and antiques shop, and Allens Boots, famous for its cowboy hats and, of course, leather boots.

Soon it was time to eat more BBQ, and this time we headed to Smitty’s Market in Lockhart. Never heard of Lockhart? You’re not alone. It’s a small town 40 minutes outside of Austin, and it felt like another world. Smitty’s puts this town on the map with their by-the-pound BBQ offerings such as pork shoulder, spare ribs and spicy sausage. Pablo, the pit master, even showed us how their seven-hour smoking process works.

The next day, we visited two different small towns famous for their BBQ. First up was The Salt Lick BBQ in Driftwood. To say that we were surprised is an understatement. This BBQ oasis in the middle of a ranch gave us a truly unique experience. We sat on long communal tables and ordered some of the best brisket and pork ribs we’ve had. Our second stop was Meyer’s Elgin Smokehouse. Their brisket and sausage are slow-cooked to perfection, and their Dinosaur Beef Ribs live up to their name with 1-lb. portions of sheer deliciousness. It was no surprise to us that they’ve been named Best BBQ in Central Texas for over 15 years.

On our fifth day on the BBQ Trail, we drove up a dirt lot to La Barbecue in Austin. Even though we got there before noon, the line was already long at this popular spot. Luckily, the free keg beer helped! We devoured their “Cuisine Texicana” (BBQ without sauce and all the flavor of slow-smoked meat) and toured their hand-built smoker.

From Austin we headed to Taylor, an even smaller town than Lockhart known for one reason: Louie Mueller BBQ. And that’s exactly why we came. Their meats were simply seasoned with salt and pepper rubs, which really let the quality of the meat shine.

After Taylor, we said “howdy” to San Antonio. Our first stop was The Big Bib, where the mantra is “You deserve to eat this good” and we all agreed after trying their beef ribs, smoked turkey and brisket. We also discovered what “farm to fork” means in The Granary ’Cue & Brew, where we learned that Beef Clod (beef glazed with BBQ and coffee bean rub) is awesome. Our last stop on the Texas BBQ Trail was Texas Pride BBQ, which we all agreed was the heart of Texas BBQ thanks to their house specialties.
